Cinnamon Oatmeal Raisin Chocolate Chip Cookies

Ingredients:

  • 3/4 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 stick unsalted butter, softened
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1 egg, room temperature
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups quick rolled oats
  • 1/3 cup raisins
  • 1 cup semi-sweet chocolate chips or chunks

Directions:

    • Preheat the oven to 350 degrees. Line cookie sheets with Silpats or parchment paper and set aside.
    • Sift together flour, baking soda, salt, and cinnamon.
    • In stand mixer, cream together butter and sugars until light and fluffy. Add egg and mix well until incorporated. Add in vanilla.
    • Add dry ingredients gradually until they are well incorporated.
    • Mix in oatmeal. Stir in raisins and chocolate chips.
    • Drop dough aboutt 1.5 inches apart by 2 tablespoons (they will spread a little).
    • Bake for about 10-12 minutes. (Take them out just before they look done).
    • Transfer to a wire rack and let cool.

  1. Delicious recipe, but I couldn’t help point out that your recipe has chocolate chips instead of raisins, but raisins in the title. 🙂
