Okay…so this one of those horrible for you, super comfort food dinners that you just have to give into every once in a while. Is it healthy? No way. Does it have a lot of pre-packaged ingredients? Yep. But it is SO good.

My mom made this every once in a while growing up and it was always a favorite of mine. After Kyle and I got married this was one of the first successful “home-cooked” meals that we made together (following the recipe on the index card my mom gave me to a tee). We’ve come along way in our cooking since those early days, but this dish will always be a classic comfort food fall-back recipe for our family.

Ingredients:

  • boneless, skinless chicken breasts
  • Italian bread crumbs
  • 1 egg
  • 1 jar Alfredo sauce
  • 1-2 small tomatoes
  • fresh basil (dry will be fine if it’s what you have on hand)
  • shredded monterey jack or mozzarella cheese

Directions:

  1. Pound chicken slightly to flatten.
  2. Whisk egg to make an egg wash. Dip chicken in egg wash until covered.
  3. Put Italian bread crumbs (I like to use a mix of regular and panko) in a plastic bag.
  4. Place one chicken breast at a time into the bread crumb bag. Seal bag and shake to coat the chicken.
  5. Spray baking dish with cooking spray.
  6. Place chicken in the baking dish and bake for 15 minutes at 400 degrees.
  7. Take the dish out of the oven.
  8. Pour Alfredo sauce over chicken.
  9. Chop tomato and basil and place over chicken. Sprinkle shredded cheese on top.
  10. Bake another 15 minutes in 400 degree oven to finish.
