Cranberry Egg Nog Muffins

It’s that time again…time for another Improv Cooking Challenge hosted by Frugal Antics of a Harried Homemaker. This month’s ingredients were egg nog and cranberries. In all honesty, I absolutely hate egg nog. My husband loves the stuff and was so excited when I brought it home for this recipe challenge.

In choosing what recipe to try, the name of the game quickly became “How can I incorporate egg nog into a recipe so that I won’t be able to taste it and will actually enjoy the finished result?” Mission accomplished.

A quick search for a cranberry egg nog muffin recipe led me to an older post from one of my favorite food bloggers, Annie’s Eats. This was our first attempt at muffins and they turned out amazingly well. I think the slightly crunchy streusel topping really adds to the flavor of these muffins. Spinach & Feta Brown Rice Bake

We’ve recently discovered the tasty goodness that is feta cheese. We bought our first container of feta last week to go in our Mediterranean wraps for a fancy work lunches. We’ve since been on the prowl for new recipes to use up the rest of the feta.

Pinterest to the rescue! Found this recipe the other night for Spinach and Feta Casserole with Brown Rice and Parmesan, pinned it, and made it the next night. It was such a big hit that there were barely enough leftovers to take to work the next day. It disappeared so fast that I couldn’t even take a fancy schmancy picture of it for the blog. Basil Cream Cheese Fried Wontons

We decided to have a little fun with the leftover wonton wrappers and cream cheese from the Improv Cooking Challenge. Now that I’ve found these Nasoya wonton wrappers I can save myself the $5-10 that a restaurant charges and make my own version of Crab Rangoon at home.

For fillings the possibilities are endless. This time we chose a simple cream cheese and basil wonton with a few added ingredients for flavor.
